Would any body know what a cheese press might look like for 1000 AD Ireland? Irish cheese press if possible viking if not.

I've no idea how authentic they are, but what I've seen people at events put curds in a muslin bag, then squish the water out with your hands initially, then pressed between two flat wooden boards. The curds were then dried out *in* the bag. Someone mentioned that drying it out in a smokehouse might be nice and sterile.

Applewood smoked cheese is nice stuff.
